| Mangetout (snap, honey or snow) peas, a small handful per person | Top tail and string the peas, wash well. |
| 1 slice pancetta for every two serves | Cut into 1cm squares |
| Fry the pancetta in a little olive oil until crispy | |
| Lightly salted boiling water | Throw the peas into the water, return to boil for one or two minutes. Do not overcook! |
| Drain the peas, and fry lightly for one minute with the pancetta and oil | |
| et voila tout ... serve while still hot |
